The simplest way to make them at home is to sprinkle with a little salt and pepper, then saute quickly in a small pan with butter or olive oil. Dredging in a little flour helps them to brown a bit.
Fish cheeks, about 2 per serving
Flour
Coarse salt and pepper
Butter or olive oil
Place fish cheeks, a few at a time, into a bag with a little flour, salt and pepper, and shake to coat.
Melt butter or olive oil in a medium frying pan over medium heat. Put cheeks into the bubbly butter and brown until cooked through, just a minute or two. Time will vary depending on the size of the pieces.
Serve with some of the browned butter poured over and a spritz of lemon. Makes 2 servings.
