This is the peak of apple season, so why not try another apple recipe? Besides, who can resist the aroma of cinnamon?
Popover Apples is a dessert fit for any occasion. It's perfect in its simplicity and taste. The preparation time for this dessert is only 15 minutes or so, and the presentation is grand (especially when you use a quiche pan). The apples are chopped and placed in the pan, then a light batter is poured over them. The result is an eye-catching dessert that begs for a scoop of vanilla ice cream or whipped cream
Popover Apples
3 medium apples, peeled and cored (we used 1 Granny Smith and 2 Jonathan)
3 eggs
1 1/4 cups milk
1/2 cup all-purpose flour
1/3 cup sugar
2 teaspoons vanilla
1/8 teaspoon salt
1 teaspoon cinnamon
Chop apples and spread evenly in a greased 10-inch quiche dish or pie plate. Beat eggs with an electric mixer on high speed until foamy. Add milk, flour, sugar, vanilla, salt and cinnamon. Beat on low speed until smooth.
Pour batter over apples. Bake for 50 to 60 minutes at 350 degrees until knife inserted in center comes out clean.
Let stand for 15 minutes.
Serve with ice cream, whipped cream or both.

Note: We changed the recipe a bit. The original recipe is Pear Popovers. We substituted the apples for pears and 1 teaspoon cinnamon for 1/8 teaspoon of nutmeg. In the original recipe, there's also an option of adding 1/4 teaspoon of rum flavoring to the batter.
