Aunt Elvira's Roethlisberger Braunschweiger Ball

Uncle Jim and Aunt Elvira Irwin moved to Florida after he retired from United Airlines as a pilot. Aunt El will make her famous braunschweiger ball on Super Bowl Sunday. And Uncle Jim will eat most of it.
- 1 pound braunschweiger, Usinger's or Kahn's preferred
- 3-ounce package cream cheese
- 1/2 cup minced onion or shallot
- Parsley, finely chopped (optional)
Bring the braunschweiger and cream cheese to room temperature. Mix until well combined. Add the onion. Form into a rough ball in the mixing bowl and refrigerate until cold and firm. Transfer the ball to a platter, then using your hands or a spatula roughly form the mixture into a ball. Roll in chopped parsley, if you like. Serve with crackers.
