Kitchen Mailbox: A peach of a summer dessert

At the end of August we went on our annual family vacation to Ocean City, Md. The weather was perfect -- hot and sunny -- and the waves were just the right size for everyone, except me, to ride. I had my share of beach time, but I also allowed some time for my vacation ritual: searching for a local cookbook. I was not disappointed. I found "Dishing Up Maryland: 150 Recipes from the Alleghenies to the Chesapeake Bay."
Peaches are one of my favorite summer fruits. When we got home I made this using fresh local peaches, and we loved every bite.

BAKED PEACHES WITH HONEY AND CUSTARD SAUCE
- 1 1/2 cups heavy cream
- 4 egg yolks
- 1/2 cup sugar
- 1 tablespoon cornstarch
- 2 teaspoons vanilla extract
- 3/4 cup honey
- 1/4 cup lemon juice
- 3 tablespoons butter, melted
- 1 teaspoon cinnamon
- 6 peaches, peeled, halved and pitted
Preheat oven to 375 degrees. Cook the cream in a medium sauce pan over medium heat until it just comes to a boil. Remove from the heat.
Whisk the egg yolks in a medium bowl and gradually whisk in the sugar and cornstarch until the mixture is light and creamy. Then gradually whisk the hot cream into the egg mixture. Return cream mixture to the saucepan, stir in vanilla and cook over medium heat, stirring constantly for about 4 minutes until mixture thickens. Do not let it boil, or it will curdle.
Combine honey, lemon juice, butter and cinnamon in a small bowl. Place peach halves in an oiled baking dish, pit side up, and drizzle the honey mixture over the peaches. Cover, and bake 15 minutes. Uncover peaches and bake for an additional 15 minutes. Remove from oven and cool 15 minutes.
Serve warm with the custard sauce. Serves 6.
