Winter Citrus Salad with Cardamom-Clove Syrup

PG tested

Now that it's citrus season, here's an easy, tasty recipe for a different kind of winter salad.

  • 1/2 cup water

  • 1/2 cup dry white wine

  • 1 cup sugar

  • 6 cardamom pods, white or green, lightly crushed with the side of a knife

  • 1 teaspoon whole cloves

  • 4 oranges, sectioned

  • 3 grapefruits, sectioned

  • 1 pomegranate, seeded

Combine water, wine, sugar, cardamom and cloves in a medium heavy-duty sauce pan. Bring to a simmer, stirring to dissolve the sugar. Simmer for 5 minutes. Let cool, then strain out the spices. Can make the syrup up to 3 days ahead; store tightly covered in the refrigerator.

Combine orange sections and grapefruit sections in a serving bowl (a clear glass one is nice). Drizzle with 1/2 to 3/4 cup of the syrup (you will have extra). Gently fold in pomegranate seeds. Keep chilled until serving.

Serves 8 to 10.
