What's for Dinner: Jamie's Nutty Orange Chicken Salad

Who has time to cook when you also have to help kids with homework or stay late at work? This quick and easy protein-packed salad gets its nutty-sweet appeal from chopped walnuts and mandarin orange slices. For even more color -- and another shot of vitamin C -- add some halved seedless purple grapes.

  • 2 cups diced cooked chicken
  • 2/3 cup mayonnaise
  • 2 hard-cooked large eggs, peeled and chopped
  • 1/2 cup chopped walnuts, toasted
  • 1 celery rib, diced
  • 1/4 cup sliced scallions (white and green parts)
  • 2 teaspoons freshly squeezed lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
  • 4 cups crisp greens, such as romaine or Boston lettuce, for serving
  • 15-ounce can mandarin oranges, drained, for garnish

In a large bowl, combine chicken, mayonnaise, eggs, walnuts, celery, scallions, lemon juice, salt and pepper and mix well.

Divide the greens equally among 4 to 6 plates. Serve the chicken over the greens and garnish with orange segments.
