Farm Markets: 9/4/08, Tomatoes, zucchini keep rolling on in

I'm always on the lookout for fresh tomato recipes. Here's one I found in the "Brilliant Food Tips and Cooking Tricks" by David Joachim. You can adjust the recipe to your liking. I add fresh basil.

BROILED TOMATOES WITH PARMESAN CRUST

Spread 1 to 2 tablespoons of extra-virgin olive oil on a baking or broiling pan. Place 4 slices of tomatoes, 1 1/2-inches thick, on the pan. Drizzle 1/2 to 1 teaspoon olive oil over each tomato slice. Mix together 2 tablespoons fresh bread crumbs, 2 tablespoons freshly grated parmesan cheese, about 1/2 teaspoon finely chopped garlic, and salt and pepper to taste. Sprinkle over tomatoes. Add another drizzle of olive oil and bake at 450 degrees until golden brown, about 10 minutes. Makes 4 servings.

SUMMER SQUASH AU GRATIN

It can be a good thing to have an overabundant supply of zucchini. Try this quick and tasty recipe as a side dish or light lunch.

  • 2 tablespoons olive oil
  • 3 to 5 summer squash cut in 1/4- to 1/2-inch rounds
  • 1 cup green pepper chunks
  • 1/2 cup onions, sliced thick
  • 1 cup croutons
  • 2 large tomatoes, chopped
  • Salt and pepper to taste
  • 3/4 cup sharp cheddar cheese, grated

In a skillet, heat olive oil over high heat and gently saute the squash, green pepper and onion for 2 to 3 minutes. Add the croutons, tomatoes, salt, and pepper. Mix well and continue to cook for an additional minute. Remove from heat and place in a heat-proof casserole dish. Top with the cheese.

Place casserole about 8 inches under preheated broiler until the cheese has just melted.

Makes about 4 to 6 servings.
