Farm markets: 7/31/08, eggplant and cantaloupe

Eggplant and cantaloupe hit the Pittsburgh area markets this week. Here's quick summer dessert: Top a couple of scoops of ice cream with chunks of cantaloupe or cut the cantaloupe in half, scoop out the seeds, then place a scoop of vanilla ice cream in the cavity. That's all there is to it. This refreshing treat is a Boston Cooler, or is it? An online search came up with one reference to a Pittsburgh Boston cooler. This dessert is elegant and simply luscious. Its success depends on ripe, soft and fresh fruit.

FIFTEEN-MINUTE FRUIT GRATIN

PG TESTED

  • 1 1/2 pounds fresh, ripe, soft fruit such as peaches and or berries
  • 1 cup heavy cream
  • 3 tablespoons sugar
  • 1 teaspoon vanilla

Preheat the broiler; set the rack as close to the heat as possible (even 2 inches is not too close).

Wash, pit, stem and peel the fruit. Cut stone fruit in halves or slices. Cut strawberries in thick slices, leave smaller berries whole.

Put the fruit (at least 2 cups) in a baking or gratin dish just large enough to hold it (about 9 1/2 inches by 5 inches).

Whip the cream with 2 tablespoons of the sugar and the vanilla until it is thick and just barely holding soft peaks.

Pour it over and around the fruit. Sprinkle with the remaining sugar.

Broil carefully, allowing the cream to brown all over and even burn in a couple of spots. Rotate the baking dish if necessary. Remove and serve.

Note: While broiling the whipping cream becomes thin and saucy. If you prefer a thicker sauce whisk until smooth 1 cup sour cream with 1/4 cup (about) milk.

Add 2 tablespoons sugar (granulated) and process. Use 1 tablespoon brown sugar for the topping.
