Recipe: Lemon Oatmeal Bars

  • 1 cup (2 sticks) butter
  • 1 cup sugar
  • 2 cups flour
  • 1 1/4 cups oatmeal
  • Juice of 3 lemons (about 1/2 cup)
  • Zest of 2 lemons, finely chopped
  • Zest of 1 orange, finely chopped
  • 14 ounce can sweetened condensed milk

Preheat oven to 350 degrees. In a mixing bowl, cream butter and sugar, add flour and oatmeal to make a slightly crumbly dough. Set aside. In a medium bowl, stir juice and zest into sweetened condensed milk. Set aside.

Butter or spray a 9-by-13-inch pan. Press 2/3 to  3/4 cup of dough onto the bottom of the pan. Spread lemon/milk mixture evenly over the top of the dough. Sprinkle the remaining dough, like streusel, over the mixture. Press down lightly to make sure streusel clings.

Bake 30 to 35 minutes or until golden. Cool completely on rack and cut into 1 inch squares.

Makes 48 1-inch square bars.
