Minute Steak Sandwich with Chunky Potato Wedges

You don't have to spend a fortune on steak to get a tasy meal, especially if you're simply going to tuck it into a sandwich. Minute steaks cook up fast and deliver tons of flavor. Don't skimp on the fried onions!

For sandwiches

  • 4 tablespoons vegetable oil, divided

  • 4 large onions, peeled and sliced

  • 4 very thin minute steaks, weighing 4 ounces each

  • Salt and freshly ground pepper

  • 2 ciabattas or baguettes, or your preferred bread

  • 4 tablespoons butter, softened

  • 4 tablespoons yellow mustard

For potato wedges

  • 6 large potatoes, skins left on, each cut into 8 wedges

  • 1 teaspoon ground cumin

  • 1 teaspoon hot paprika

  • 2 tablespoons olive oil

  • Salt and freshly ground pepper

Make potatoes: Preheat oven to 375 degrees. Put potato wedges in a bowl and mix with spices and vegetable oil. Lay out evenly on a baking sheet and roast in oven for about 25 minutes, until golden brown and cooked through.

Make sandwiches: Place a skillet on stove and add half the oil along with the onions. Pan-fry onions on high heat until golden brown and a bit crispy around the edges, 10 minutes.

Move the cooked onions over to the edge of pan and increase the heat. Add another tablespoon oil. Season steaks on both sides with salt and pepper and put them in pan. Cook for 45 seconds on each side. Turn off heat and take the steaks out of pan to rest.

Cut your chosen bread in half and toast on both sides either on a grill pan or under the broiler. Spread with butter and loads of mustard. Pile on the onions and slice steak before loading onto sandwich. Put on top half of toasted bread and dunk into more mustard while you eat.

Serve with chunky potato wedges.
