The Easter menu gets so much better when you mix and match dishes. Eating ham in early spring dates back to the sixth century in northern Europe. Pigs were slaughtered after fall’s first frost as it was believed that they tasted better because the animals had until then been foraging for roots and acorns in the forests. The meat would be salted and smoked and thus preserved, and was one of the few available to eat in early spring. Settlers brought this tradition to the New World and a star was born for the Easter table.

Ingredients

1 ready-to-eat cooked ham, bone-, shank end or butt end, about 9 to 11 pounds

1 tablespoon garlic powder

2 to 3 teaspoons cayenne

2 teaspoons onion powder

2 teaspoons ground thyme

2 teaspoons brown sugar

2 teaspoons pepper

2 teaspoons chipotle chili powder

1 teaspoon smoked paprika

1 teaspoon all-spice

½ teaspoon cinnamon

1 small ripe pineapple, peeled, cored and chopped, or 1 (14-ounce) can pineapple chunks

For glaze

½ cup brown sugar

½ cup maple syrup

¼ cup bourbon or rum (optional)

1 or 2 chipotle chilies in adobo, finely chopped

¾ cup pineapple juice

Instructions

Preheat oven to 325 degrees. Place ham in a roasting pan.

In small bowl, combine all the dry ingredients for spice mixture. Rub spice all over the ham. You may not use all of it, depending on size of ham. Cover tightly with foil and bake for 1½ hours.

While ham is cooking, in a medium sauce pan, combine brown sugar, maple syrup, bourbon or rum, chipotle chilies and pineapple juice. Bring to a boil over medium-high heat, stirring constantly. Once mixture comes to a boil, reduce heat to low and simmer for 10 to 15 minutes, or until liquid is reduced by about half. Remove from heat and set aside until ham is done.

Remove baked ham from oven and increase temperature to 400 degrees degrees.

Brush baked ham with glaze (you might not use all the glaze). Place chopped pineapple in bottom of the dish around the ham. If desired, you may also use toothpicks to secure pineapple onto the ham.

Return ham to oven and bake uncovered until heated through and caramelized, 25 to 30 minutes. Remove and let sit 5 minutes. Serve warm with remaining glaze.

Ingredients

¼ cup (packed) golden brown sugar

1 tablespoon apple cider vinegar

½ cup Dijon mustard

¼ cup coarse-grained Dijon mustard

Salt and pepper

Instructions

In medium bowl, whisk sugar and vinegar in medium bowl until sugar dissolves.

Whisk in mustards. Season sauce to taste with salt and pepper. Cover and refrigerate sauce for 1 day. (Can be prepared 3 days ahead. Keep refrigerated.)

Serve ham with sauce.

Makes about 1 cup.

1½ cups chopped fresh peaches (about 2 large peaches)

3 tablespoons light brown sugar

2 tablespoons white balsamic vinegar

Instructions

Melt butter in a small skillet over medium heat.

Add onion and saute 2 to 3 minutes or until tender.

Add peaches, brown sugar and vinegar and cook, stirring often, 2 to 3 minutes or until thoroughly heated.

Even though its date shifts around within the Gregorian calendar, Easter is firmly grounded in the realities of springtime. It falls on the first Sunday after the first full moon on or after the spring equinox. Fresh green peas, young fava beans, tender and grassy-flavored asparagus, crisp celery, deep green spinach, artichokes with squeaky leaves, and perky and bright herbs — whether in soups, salads or tarts — reflect the theme of spring awakening.

Spring Pea Soup With Roasted Radishes

Ingredients

7 ounces radishes, quartered

Salt and pepper, to taste

4 cups vegetable stock, divided

1 bunch scallions, chopped, divided

1 pound 5 ounces fresh or frozen peas (about 2 cups)

6 ounces spinach leaves, shredded

Chopped fresh chervil, to serve

Creme fraiche or Savory Cashew Cream, to serve (recipe follows)

Instructions

Preheat oven to 350 degrees, and line a baking sheet with parchment paper.

Toss radishes in bowl with a splash of stock or water and a pinch of salt and pepper. Spread out on prepared sheet and bake for 15 to 20 minutes, turning every 5 minutes. Radishes should be tender with a firm center and have a lovely pink color when done.

Meanwhile, make the soup. Put scallions, reserving 3 tablespoons, into a pot with a splash of water and cook over medium heat for 5 to 10 minutes to soften. Add remaining stock and bring to a boil. Add peas, spinach leaves, 1½ teaspoons salt and a good pinch of pepper. Lower heat and simmer for an additional 2 to 3 minutes, then remove pot from heat. Puree soup using an immersion blender or blender. Taste and add more seasoning, if needed.

Serve with roasted radishes, reserved chopped scallions, chevril and cashew cream, if desired.

1½ cups raw cashews, soaked overnight and rinsed

1 tablespoon apple cider vinegar

1 teaspoon salt

Place cashews, vinegar, salt and ⅔ cup water in blender and blitz until smooth.

Ingredients

For pastry

1 tablespoon sugar

½ teaspoon kosher salt

1 cup all-purpose flour, plus more for surface

6 tablespoons chilled unsalted butter, cut into pieces

1 large egg, beaten to blend

For filling

1 pound 3 ounces asparagus

2½ ounces Dijon mustard

Salt flakes and freshly ground black pepper

3½ ounces crumbled feta

4 hard-boiled eggs

1 teaspoon snipped chives

1 teaspoon chopped chevril

1 teaspoon chopped flat-leaf parsley

Instructions

Make crust: Whisk sugar, salt and 1 cup flour in a medium bowl. Add butter and rub in with your fingers until mixture resembles coarse meal with a few pea-size pieces remaining. Drizzle egg over flour mixture and mix gently with a fork until dough just comes together.

Turn out dough onto a lightly floured surface and knead until smooth (a few dry spots are OK). Form dough into a disk. Wrap in plastic and chill until firm, at least 2 hours. (Dough can be made 2 days ahead. Keep chilled, or freeze up to 1 month.)

Preheat oven to 410 degrees. Line a baking tray with parchment paper.

Roll dough out into a 16-by-8-inch rectangle. Lift carefully onto the tray and roll edges to make a pretty border. Refrigerate while you prepare asparagus.

Snap ends off asparagus so each spear is about 6 inches long. Bring large saucepan of water to boil, add aspargus and cook for 3 minutes. Remove and place in bowl of ice water, then drain and pat dry.

Lightly spread mustard on each pastry rectangle, then arrange asparagus on top in lines. Season with salt and pepper, then crumble feta sparingly over the top.

Bake on top shelf of oven for 20 minutes or until golden brown. Remove, then slide onto wire rack to cool slightly.

Grate eggs in a line down the center of tart and sprinkle with herbs. Place on platter to serve at the table, or slice and place individually.

Serves 8.

Ingredients

1½ cups fresh or frozen green peas

1 pound asparagus, trimmed and cut diagonally into 2½-inch pieces (4 cups)

12 ounces sugar snap peas, trimmed (about 4 cups)

For dressing

3 tablespoons minced shallots

3 tablespoons extra-virgin olive oil

1½ teaspoons grated lemon rind

2 tablespoons fresh lemon juice

1 tablespoon Dijon mustard

¾ teaspoon kosher salt

½ teaspoon freshly ground black pepper

For salad

4 ounces pea tendrils, pea shoots, watercress, baby spinach or arugula (about 5 cups)

1 cup loosely packed fresh flat-leaf parsley leaves

½ cup torn fresh mint leaves

1 firm, ripe avocado, cubed

Instructions

Cook veggies: Bring a large Dutch oven filled with water to a boil over high heat. Add green peas, asparagus and sugar snap peas. Boil until crisp-tender, about 3 minutes. Drain and rinse well with cold water; drain well.

Make dressing: Whisk together shallots, oil, rind, juice, mustard, salt and pepper in a large bowl. Add blanched vegetables; toss well to coat. Add pea tendrils, parsley and mint leaves, and avocado. Toss gently to combine.

Serves 8.

Basic potatoes

A holiday meal is incomplete without spuds, but look beyond the tried-and-true mashed potatoes and go for something that is equally comforting. To prep ahead, scrub the potatoes under cool running water to remove any dirt. Also, always remove the green spots. Cut as required, place them in a bowl and cover with an inch of cold water. Refrigerated, the potatoes will stay creamy white overnight. Then drain and pat dry before roasting or baking them.

Garlicky Scalloped Potatoes


A perfect accompaniment for baked ham are scalloped potatoes, which go from thinly sliced raw potatoes to soft saucy ones when baked with cream.

In addition to being thinly sliced, it’s important to use heavy cream because the cream won’t break down under high heat and curdle. The calorie-conscious can cut the fat some by lightening the cream with half-and-half or a little bit of whole milk.

“It is comfort food, and so this is not the time to cut the fat,” says Emily Tyra, editor of the Taste of Home magazine.

Russets are ideal for this dish as they can hold their shape and have the right texture when cooked in the sauce. To cut cooking time for the potatoes, simmer them briefly in cream before they go into a baking dish.

It’s best to keep the seasoning simple for scalloped potatoes, Ms. Tyra says, after all it is a simple dish. To maximize the garlic flavor in this dish, I used a technique that I learned from my German friend. She simply rubs a whole garlic clove on the baking dish before placing the potatoes in it.

2 tablespoons unsalted butter

5 garlic cloves, minced, plus 1 for rubbing baking pan

1 cup heavy cream

2 cups half-and half

2 bay leaves

Pinch of ground nutmeg

1¾ teaspoons salt

1 teaspoon freshly ground black pepper

6 russet potatoes, peeled and cut into ⅛-inch thick slices

1½ cups Parmesan cheese, grated, divided

Instructions

Melt butter in pot over medium-high heat. Add onion and cook until softened and beginning to brown, about 5 minutes. Add garlic and give quick stir.

Add heavy cream, half-and-half, bay leaves, nutmeg, salt, pepper and potatoes. Cover, reduce heat to low and cook until potatoes are almost tender, about 20 minutes. Discard bay leaves.

Preheat oven to 350 degrees. Rub a clove of garlic onto a 13-by-9-inch pan.

Transfer half of potato mixture to dish and sprinkle with ¼ cup Parmesan cheese. Add remaining mixture and top with remaining cheese.

Bake until top is golden brown, about 30 minutes.

Let cool for 5 to 10 minutes before serving.

Serves 6 to 8.

Roasted Potatoes With Rosemary


There are no bells and whistles when it comes to simple recipes such as roasting potatoes, says Julia Collin Davison, editorial director of America’s Test Kitchen, as they cannot hide behind anything.

But she has a tip. Don’t just scrub the spuds to remove the dirt, toss them with olive oil and seasonings, and roast them uncovered in the oven.

“Take the time to find foil to cover the potatoes,” she says. “Otherwise the exterior will be tough and leathery and the interior won’t be creamy.” The foil allows the potatoes to steam.

After about 20 minutes, remove the foil and return the spuds to the oven to get a crispy skin. The combination of covering and uncovering the potatoes is key.

New potatoes such as the thin-skinned red varieties and fingerlings are spring delights and ideal for roasting as they can hold their shape. Baby Yukon golds would work, too, even though they have a slightly soft interior, Ms. Collin Davison says.

If you want to amp up the flavor, dress the potatoes with cheese, lemon or herbs that go with the rest of the meal. She prefers hardier herbs such as rosemary, thyme and oregano, as they can better handle the oven heat. But remember at the end of it all, she says, you also want the flavors of the potato to shine through.

After about 20 minutes, remove the foil and return the spuds to the oven to get a crispy skin. The combination of covering and uncovering the potatoes is key.

New potatoes such as the thin-skinned red varieties and fingerlings are spring delights and ideal for roasting as they can hold their shape. Baby Yukon golds would work, too, even though they have a slightly soft interior, Ms. Collin Davison says.

If you want to amp up the flavor, dress the potatoes with cheese, lemon or herbs that go with the rest of the meal. She prefers hardier herbs such as rosemary, thyme and oregano, as they can better handle the oven heat. But remember at the end of it all, she says, you also want the flavors of the potato to shine through.

The garlic is minced to paste here so that the maximum flavor is extracted. “The more you cut garlic, the more flavor it has,” says Julia Collin Davison of America’s Test Kitchen.

Ingredients

3 pounds petite red potatoes, unpeeled, halved (keep very small ones whole)

4 tablespoons extra-virgin olive oil

Salt and pepper to taste, divided

3 tablespoons minced fresh rosemary

3 garlic cloves, minced to paste

Juice from ½ lemon

Instructions

Adjust oven rack to middle position and heat oven to 425 degrees. Line rimmed baking sheet with foil.

In a bowl, toss potatoes with oil and season with salt and pepper. Arrange potatoes in a single layer on sheet with cut side facing down

Cover with foil and roast for 20 minutes.

Remove foil and roast until sides of potatoes touching pan are crusty and golden, about 15 minutes.

Flip potatoes over and roast for another 5 minutes.

Sprinkle rosemary over potatoes and roast for 3 more minutes.

In a serving bowl, toss potatoes with minced garlic. Add lemon juice and salt and pepper to taste.

Serves 6 to 8 as a side.

Ingredients

1 (30-ounce) package frozen shredded hash brown potatoes, thawed

1½ teaspoons canola oil

1 small onion, diced

20-ounces Italian sausage, sliced

3 cloves garlic, finely minced

3 eggs

⅓ cup milk

½ teaspoon onion powder

½ teaspoon salt

½ teaspoon freshly ground black pepper

2½ cups sharp cheddar cheese, shredded, divided

Instructions

Preheat oven to 350 degrees. Grease a 13-by-9-inch baking dish. Spread thawed potatoes in dish.

In a skillet, heat oil over medium heat and add diced onion. After stirring for 1 minute, add sausage. Break up sausage slices while stirring and cook until evenly browned. Turn off heat and remove excess fat. Then add garlic; stir to combine.

In a medium bowl, whisk eggs, milk, onion powder, salt and pepper together. Pour custard over potatoes. Sprinkle 1½ cups cheese.

Add sausage mixture on top and spread it evenly over custard.

Sprinkle remaining 1 cup cheese on top.

Bake for 50 minutes to 1 hour, until golden brown.

Serves 6 to 8.

Carrot cake with cream cheese frosting, lemon cake with coconut icing or lemon-filled coconut cake, and gooey butter cake with chocolate are all classic Easter desserts. But for less muss and fuss, why not convert them to bars, with a crust or not, and enjoy the same flavors. You almost always can stick to the same measurements and need only to change the shape of the pan and cooking time for them to come out perfectly as double- or triple-decked bars.

Lemon-Coconut Squares


Classic lemon bars typically have a shortbread crust — flour, powdered sugar, a little bit of salt and a good amount of butter. But bakers have been putting that tradition aside by making crusts with chocolate, shredded coconut or even dried lavender.

Similarly bakers don’t always stick to the traditional filling of lemon juice (and sometimes lemon zest), sugar and eggs. They add crystallized ginger and almonds and also herbs such as rosemary or thyme.

Emily Tyra, editor of the Taste of Home magazine, says for a classic lemon bar, “the shortbread crust should be really buttery and the lemony filling tart and custardy.”

Ingredients

Crust

½ cup plus 2 tablespoons coconut oil, in solid state

¼ teaspoon kosher salt

⅓ cup powdered sugar

½ cup sweetened flaked coconut

1¼ cups all-purpose flour

Lemon filling

4 egg yolks

1 (14-ounce) can sweetened condensed milk

1 tablespoon grated lemon zest

¾ cup lemon juice

Instructions

For crust: Preheat oven to 350 degrees. Line 8-by-8-inch pan with foil and coat lightly with cooking spray.

In bowl, beat coconut oil, salt and powdered sugar with a hand-mixer on medium speed until smooth.

Add coconut and flour and continue mixing until incorporated. The mixture will be crumbly, but it will hold together when squeezed.

Press dough evenly into pan. Bake crust for 15 to 20 minutes, until edges are lightly golden. (When crust is done, leave oven on.)

For filling: In bowl, whisk egg yolks on medium speed for 2 minutes.

Add condensed milk and mix on medium speed for 2 minutes.

Add lemon zest and lemon juice and mix on medium speed for 2 more minutes.

Pour lemon filling onto warm, baked crust. Return to oven and bake for 10 to 15 minutes, until lemon layer is just set. Let cool in pan for 20 minutes.

Transfer pan to refrigerator to cool completely, at least 2 hours.

When chilled, cut into squares and serve.

Makes 16 squares.

1 (15.25-ounce) box dark chocolate cake mix

3 large eggs, divided

1 cup butter, melted and divided

1 (8-ounce) package cream cheese, softened

1 teaspoon vanilla extract

1 (16-ounce) package powdered sugar, plus more dusting if desired

Instructions

Preheat oven to 350 degrees. Line a 13-by-9-inch baking pan with parchment paper, letting excess extend over sides of pan.

In a large bowl, beat cake mix, 1 egg and ½ cup melted butter with a mixer at medium speed just until combined. Pat mixture into bottom of prepared pan.

In another large bowl, beat cream cheese with a mixer at medium speed until smooth. Beat in vanilla and remaining 2 eggs. Reduce speed to low; beat in powdered sugar until well combined.

Slowly add remaining ½ cup melted butter, beating until well combined. Pour onto crust in prepared pan.

Bake until center is just set and jiggles slightly when gently shaken, 40 to 50 minutes (do not overbake.)

Let cool completely on a wire rack. Using excess parchment as handles, remove from pan before cutting into bars.

Garnish with powdered sugar if desired.

Store in airtight container for up to 2 days.

Makes about 24 bars.

In her cookbook “American Cake,” Anne Byrn writes that one of the earliest carrot cake recipes printed in the U.S. was in “The Neighborhood Cook Book” by the Council of Jewish Women in Portland, Ore., in 1912. But carrot cake as we know it today came into being in the 1970s.

1 cup vegetable or canola oil

½ cup brown sugar

½ cup granulated sugar

3 eggs

2 cups flour

1½ teaspoons baking powder

1 teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

2 cups grated carrots

½ cup raisins

1 cup chopped nuts

1 teaspoon vanilla

1 cup crushed pineapple, not drained

Cream Cheese Frosting

½ cup butter, softened

8 ounces cream cheese, softened

1 teaspoon vanilla

3½ cups powdered sugar

Instructions

Preheat oven to 350 degrees. Line a 10-by-15-inch jelly roll pan with parchment paper. Lightly grease it.

In a large bowl, whisk oil and sugar. Add eggs one at a time.

In a medium bowl, add flour, baking powder, baking soda, salt and cinnamon, and mix together.

Add flour mixture gradually to eggs, and combine with an electric beater.

Add carrots, raisins, nuts, vanilla and pineapple to bowl, and combine with a spatula.

Pour into prepared pan and bake 25 to 30 minutes until a toothpick comes out clean. Let cool completely on a wire rack.

For frosting, beat butter and cream cheese until nice and fluffy. Add vanilla and powdered sugar and beat until smooth.

Spread on top of cooled cake. Cut into equal sized bars and decorate top with carrots made with sanding sugar.

Makes 16 bars.
