In Finland, this delightful dessert is called "Mansikkalumi."
1 cup fresh strawberries (or frozen strawberries, thawed and drained)
1/4 cup sugar
2 egg whites
1/2 cup whipping cream
Large, whole strawberries for garnish, if desired
Puree the strawberries in a blender, or press through a fine sieve. Mix in the sugar.
Beat the egg whites until stiff; place in bowl with pureed strawberries.
Whip the cream. Very gently fold the beaten egg whites and whipped cream into the strawberries.
Divide the mixture into 4 serving bowls and garnish each with a whole strawberry, if desired. Serve at once, or refrigerate up to 3 hours before serving.
Makes 4 servings.
