LEMON-NUT DRESSING

Serve on steamed or raw vegetables, salads, grains, or beans.
3 cups tablespoons extra-virgin olive oil
2 tablespoons nut butter (peanut butter, almond butter or tahini)
2 tablespoons fresh lemon juice
2 tablespoons brown rice vinegar
1 teaspoon sugar
Pinch of salt

Combine all the ingredients in a small bowl and whisk together until emulsified and smooth. Makes 1/2 cup.
