This is her mother's recipe. The bread, said McHugh, is on every breakfast table in Ireland.
1 3/4 cups all-purpose flour
1 3/4 cups whole wheat flour
3 tablespoons wheat bran (available at health-food stores)
2 tablespoons old-fashioned oats
2 tablespoons brown sugar
1 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons butter, chilled and cut in pieces
2 cups (scant) buttermilk
Butter a 9-by-5-by-3-inch loaf pan, and preheat oven to 425 degrees.
Combine first 8 ingredients in a bowl and mix well. Add butter and mix in with fingertips until the mixture is like fine meal. Add buttermilk to form soft dough. Put in prepared pan, and bake for 40 minutes.
Tester's note: We used unbleached flour which has bran (and wheat germ) in it, so we didn't add bran.
