This recipe received first place in the Girl Scouts of Southwestern Pennsylvania 2000 contest.
Crust:
1 box Girl Scout Reduced Fat Apple Cinnamon cookies, crushed
1/3 cup chopped walnuts
1/3 cup margarine
Filling:
1 box No Bake Cheesecake mix (filling only)
1/4 teaspoon vanilla
1/2 teaspoon cinnamon
For the crust: Melt margarine. Reserve 1/4 cup crushed cookies for topping. Mix the rest of the cookie crumbs, chopped walnuts and melted margarine. Press into bottom of an 8-by-8-inch pan with the back of a spoon. Bake for 8 minutes in 375-degree oven. Let cool.
For the filling: Prepare cheesecake filling as directed on box (can use whole or 2 percent milk). Mix in the vanilla and cinnamon. Spoon into the cooled crust. Chill for several hours. Sprinkle the top with the reserved crumbs. Cheesecake can be frozen one to two weeks. Thaw in refrigerator. For garnish, serve with sliced apples.
