1 1/4 cups flour
3 eggs
2 tablespoons water
Mix flour and 1 egg in a food processor. Add remaining eggs and 2 tablespoons water. Process until smooth and and dough forms a ball. Knead by hand on floured board until dough is smooth. "Kneading is the most important part. If dough is wrong texture it will be unworkable," advised Betty Balogh.
Cut into 4 small balls and roll each ball in a pasta machine. "I don't know of too many people who roll by hand," said Balogh. "Pasta machines are very inexpensive. We use those metal hand-operated ones."
After the machine rolls into strips, roll again into a 20-by-25-inch rectangle about 1/8 inch thick. Cut into 1-inch squares for noodles or use pasta cutters for shapes. Dry overnight on lightly floured board.
Note: Free Hungarian Reform Church of McKeesport sells homemade noodles. Csiga square noodles are $5 per pound; thin noodles, $2 per pound. Call 412-672-7298 and ask for Judit Borsay.
